avocado & arugula tartine


During my weekly visit to the Healing Present farmer’s market, I was delighted to get my hands on some of Eleanor Rivera’s buttery-sweet, organic avocados. Inspired by a tartine recipe I chanced upon from 101 Cookbooks, I whipped together my own Avocado & Arugula Tartine.

Toast a few slices of nutty, crusty, whole grain bread until golden, then spread some extra virgin coconut oil on top (add just enough oil to seep into the nooks and crannies, but not so much that it gets soggy). Smear 1/4 of the avocado across each slice, then top with fresh arugula leaves and season with salt and pepper to taste.

This open-faced sandwich is perfect as a light lunch, or can be sliced and dressed up as a summer evening canapé.
